That’s the advice of a researcher from Pennsylvania State University whose study recently appeared in the American Journal of Clinical Nutrition. Ground up steamed yellow squash goes great in a dish of macaroni and cheese. Add pureed cooked cauliflower to a chicken and rice casserole. Not only will you eat fewer calories but you’ll eat more nutrients.
